Grilled Apples & Brie Sandwich

This is a scrumptious lunch that’s so easy to make under way and is always a crew pleaser. Apples are soooo sailboat friendly. Just hang them in an airy fruit hammock and they’ll last for weeks off shore or in the harbor. Granny Smith apples are the preferred variety for these sandwiches as they are a very tart apple which compliments the warm and gooey melted brie and the sweet spicy honey mustard. Use a seeded multi-grain bread to pack in fiber and protein. With all this nutrition, you’ll never go back to a plain old grilled cheese again!

Apples & Brie Grilled Cheese

Whole grain bread, sliced thick
Soft butter
Granny Smith Apples, sliced thin
Brie Cheese, slice 1/4″ thick
Spicy Honey Mustard

Slice the multi-grain bread into 1/2″ slices. Butter one side of each slice.

Slice the brie into nice thick 1/4″ slices. I leave the cheese rind on. It’s edible.

Slice the Granny Smith apples into thin, even slices.

Then build your sandwiches. Place bread in a pan, butter side down. Slather on honey mustard, add the brie cheese and apple slices. Top with another piece of bread, butter on top, honey mustard on the inside. Light your burner and let grill on medium low.

Turn after about 4 minutes or until buttered side gets crispy. Grill for another 3-4 minutes until you see the Brie cheese melting down the side. Oh, yum!

  1. Galley Pirates sure know how to make an ordinary grill cheese sandwich into a culinary delight. Was the Katie Belle sailing into “my” Halifax Harbour? by the spelling of Harbour, I think so!

  2. This is our happy sandwich. Great crunch! The ” Katie Belle” arrived ,under full sail, in Halifax Harbour saturday. After a month in South Carolina, the welcome was warm.
