Galley Pirates

For a healthy and refreshing alternative to candied yams, try this combination of autumn vegetables which brings out the lighter side of sweet potatoes.

Roasted Sweet Potatoes and Fennel

4 large sweet potatoes, peeled and sliced just under 1″ thick
2 large fennel bulbs, sliced 1/2″ thick and separated into rings
3 tablespoons butter
2/3 cup chicken broth
1 teaspoon celery seed
2 teaspoons fennel seed
2 teaspoons salt
1 tablespoon sugar
Fresh ground black pepper

This recipe can either be baked in the oven or roasted, covered, on a low burner. Since our turkey was occupying the oven, we prepared this on the stove top.

Melt butter in a large sauce pan. Add sweet potatoes and fennel. Stir to coat the vegetables with the butter. Cover and brown a bit for 5-10 minutes, stirring occasionally. Add chicken broth, celery seed and fennel. Turn your flame to low, cover and let simmer until just tender, about 30-40 minutes. Add salt, sugar, pepper and more butter if desired. Cover and cook 10 minutes longer. Adjust seasonings as needed. Serve warm.

With the sound of Celtic music ringing in my ears I am preparing our Thanksgiving feast.I always have a smile on my face when I serve this side. It has texture, flavour , and simple to prepare.
The Canadian celebration started 40 years before the American pilgrims had their dinner.In1578 the British explorer,and occasional pirate,Martin Frobisher held a feast of thanksgiving in Newfoundland( the most heart warming place on earth).He was giving thanks that he and,well, most of his crew had returned from a rough trip through the Artic looking for theNorthwest passage. He didn’t find it but was happy to be alive. The meal would have come from the ships’ storage and tin cans.It started a tradition.Finally in 1957 ,the second Monday in October , through an of Parliament , became our official Thanksgiving Day. In Quebec the holiday is called Action de Grace.

Thanks for this wonderful history and tribute to Canadian Thanksgiving! My skipper is a Newfie with a Nova Scotian mother. His parents celebrate Thanksgiving every October in Caribou, NS with their Canadian relatives. And we just returned from a memorial in Newfoundland, with maritime recipes to share. The Rock is definitely God’s country! Keep checking in with us as we will have a Fish and Brewis post this fall. Now it’s time to put some Celtics music on!
