To make vinaigrette, combine 4 strawberries, vinegar, olive oil, honey, and salt and pepper to taste in a food processor and blend until smooth.
Toast pine nuts in a dry, hot frying pan until lightly brown. Combine spinach, remaining strawberries, sliced, and pine nuts in a bowl and toss with vinaigrette.
Beat egg in a small dish and put bread crumbs on a separate plate. Cut goat cheese into 8 x 1" rounds using dental floss. Dip each cheese round in egg, then in crumbs, pressing to adhere to all sides. Heat vegetable oil in frying pan until shimmering and place breaded cheese rounds in gently. Fry for about 2 minutes on each side, until golden brown, flipping carefully. Remove to paper towel to drain.
Serve salads and place 2-3 rounds of cheese on each.
