Anne’s Conch Fritters
A must-have recipe from the Abacos
Ingredients

Canola oil
3/4
cup
Flour

Egg
1/2
cup
Milk
1
cup
Conch meat,
chopped
1/2
cup
Onion,
chopped
1/2
cup
Green pepper,
chopped
1/4
tsp
Cayenne pepper,
or to taste
Salt & pepper,
to taste
Instructions
Pound the conch meat to tenderize. Chop into small pieces.
Mix flour, egg and milk. Add conch and vegetables.
Heat the oil in a large deep pan until hot. (until flour sizzles)
Drop spoonfuls of batter into the heated oil. Fry until golden. Remove with a slotted spoon and place on paper towel to absorb extra oil. Serve hot.
