2-4medium-hot chiles, seeds removed and finely diced
1smallred onion
1lbokra, sliced into ~1/3" pieces
1-1/2tablespoonsgaram masala
1tablespoonground coriander
2-3tablespoonstomato paste
1/3cupwater
salt, to taste
Instructions
Heat oil over medium-high heat and saute onion, garlic and chiles until soft. Add spices and tomato paste and stir through thoroughly. Add okra, salt to taste, and 1/3 cup water and let cook until okra is tender but still with some crunch. Serve over basmati rice.
