Coconut Rice with Plantains and Shrimp
Not your typical Columbian Coconut Rice, but a creamier, "risotto" type of rice.
Ingredients
Coconut Rice

Unsweetened natural coconut milk

grated natural coconut, with extra to garnish
Fried Plantains

(can use Olive oil as well)

Shrimp Sauté

Garlic cloves,
mince or pressed

Green bell pepper,
finely chopped
