1bunch curly kale or similar greens, stalks removed and leaves sliced into 1" ribbons
1/2cupdried cherries
1/2cupcoconut flakes
3tbspfresh lime juice, from 3 limes
Instructions
Salt and pepper chicken. Heat oil in a large skillet and brown chicken on both sides. Remove chicken to a plate, leaving drippings behind.
Saute shallot in drippings until soft. Add spices and stir through until fragrant, about 30 seconds. Add broth and return chicken to pan. Simmer for about 5 minutes. Remove chicken to a plate.
Shred chicken and reduce liquids in pan for about 5 minutes. Return shredded chicken to pan, and stir and heat through.
Pour warm chicken mixture over greens and toss to wilt. Add lime juice, cherries and coconut and toss. Season with salt and pepper to taste.
