Any recipe that uses dried ingredients…beans, rice, mushrooms, lentils, peas…is the perfect staple food for cruising. Add a pressure cooker to the mix and you have offshore culinary perfection.
Ingredients
1Medium onion,chopped
2Cloves garlic,minced
3Carrots,peeled and chopped
1Large ham hock or ham bone with meat
1lbDried green peas
6cupsChicken stock(or stock made with Better Than Bouillon)
2Bay leaves
1tspThyme
Fresh ground pepper
Instructions
Very easy. Rinse the dried peas. Throw all ingredients into a pressure cooker (or conventional large stew pot.) If using a pressure cooker, let come up to steam, lower heat to a simmer and cook for 30 minutes. If using a conventional pot, cover, lower to a simmer and cook for 50-60 minutes. Add more water if needed.
Ladle into bowls ensuring there's some good chunks of ham in it.
Creamy Curried Pea Soup
For a more gourmet style cream soup, cream the soup in your hand-cranked food processor with table cream (ratio 3:1, soup to cream). Add curry powder, a couple pinches of sugar and a dash or two of cayenne. Grind into a smooth puree. Adjust seasonings if needed.
