Easy summer sandwich which can be made with cooked shrimp or crawfish instead of Langostino.

Ingredients
1 1/2-2lbsCooked, frozen Langostino meat
2Celery stalks,minced
2/3cupVidalia onions,minced
1tbspFresh parsley,minced
1tbspFresh tarragon,minced
1/2cupMayonnaise
2tbspFreshly squeezed lemon juice
1tspSalt(or to taste)
Fresh ground black pepper
Pinch of sugar
6Hoagie rolls or hot dog buns
Instructions
If your lobster meat is cooked and frozen, let thaw by running it under warm water in a colander. Chop the lobster meat into small bite-sized pieces. Finely chopped the celery and onions. Juice one lemon. Mince the parsley and tarragon.
In a small bowl, combine the lemon juice and tarragon. In a large bowl, combine all ingredients. Mix well and refrigerate. This can be made a day ahead.
Toast the hoagie rolls or hotdog bun. Load up the rolls with the Langostino salad and serve with chips and fruit.
