Ingredients
8oz.Sausage
1Leek
1Red bell pepper
1 Green bell pepper
2cupsShredded cheddar cheese
1/2bagTater Tots(around 50-55 individual tot. Enough to cover the bottom of a 9x13 pan)
8Eggs
1 1/2 cupsWhole milk
1/2tspBlack pepper
1/2tspGarlic powder
1/4 tspSea salt
Instructions
Preheat oven to 350ยบ. Grease a 9x13-inch dish with nonstick spray. Place a layer of Tater Tots in the pan.
Thinly slice the leek and chop the peppers.
In a large skillet, brown the sausage. Half way through browning add the leeks. Continue to cook until the sausage is brown and the leeks are limp. Add the chopped peppers and continue to cook until the peppers warm up, about 5 more minutes. Layer onto the Tater Tots.
Sprinkle the 2 cups of cheese on top and poke down into the sausage mixture, leaving a fair amount of cheese on top.
In a medium bowl, whisk together the eggs, milk, pepper, garlic powder, and salt. Pour the mixture over the top of the tater tot mixture.
Bake for 45 to 50 minutes. Let rest for 10 minutes before serving.
