Tater Tot Breakfast Casserole

You know that exciting feeling when you move your boat to a new marina, right? Even though it’s the same old boat, the new location feels like you’re in a brand new home. There are new sounds, new waves and movement, and the sun casts its light in different beams through the portholes. We are so happy to be welcomed to Annapolis City Marina by a great group of close friends and live aboards!

I planned on making brunch for some folks at the marina and their out-of-town friends. A Tater Tot Breakfast is an easy casserole to throw together for large groups.

Tater Tot Breakfast Casserole

Ingredients
8 ounces sausage
1 leek, sliced thin
1 red bell pepper seeded and diced
1 green bell pepper seeded and diced
2 cups shredded cheddar cheese
Half a bag of Tater Tots
8 large eggs
1 1/2 cup whole milk
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/4 teaspoon salt

Instructions
Preheat oven to 350º. Grease a 9×13-inch dish with nonstick spray. Place a layer of Tater Tots in the pan.

Thinly slice the leek and chop the peppers.

In a large skillet, brown the sausage. Half way through browning add the leeks. Continue to cook until the sausage is brown and the leeks are limp. Add the chopped peppers and continue to cook until the peppers warm up, about 5 more minutes. Layer onto the Tater Tots.

Sprinkle the 2 cups of cheese on top and poke down into the sausage mixture, leaving a fair amount of cheese on top.

In a medium bowl, whisk together the eggs, milk, pepper, garlic powder, and salt. Pour the mixture evenly over the top of the tater tot mixture.

Bake for 45 to 50 minutes. Let rest for 10 minutes before serving.
