
Underway in rolling seas from Columbia to Panama, we were making good time on a starboard tack with no indication of changing course for days. This was the perfect opportunity to make a leisurely lunch with the staples onboard. Understandably, the cabin of SV Solitude was filled with canned goods to get the owners and crew through much of the World ARC. Beans were the main staple, and canned are more practical than dried as they don’t consume the water and energy needed to rehydrate dried beans. Digging through the “pantry” of cans….labels removed, marked with Sharpies and stowed….anywhere…were versatile chick peas (garbanzo beans). As we’ve shared a White Bean Hummus with you here on Galley Pirates before, I neglected to get any “in progress” pics, but you’ll get the picture.

Basic Hummus
15 ounce can of chickpeas
1/2 cup tahini paste
1/4 cup olive oil (extra virgin)
1/4 cup olive oil
1/3 cup lemon juice (freshly squeezed)
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper (optional)
1-2 garlic cloves, pressed
1/2 tsp salt, more or less to taste
If you have a blender or a blending stick, process all the ingredients and blend until smooth. Add a little water or EVOO if it is too thick. We had no such equipment ready to deploy onboard so I mashed all of the ingredients together with the back of a wooden spoon. It was a little chunky in consistency but so, so good. And food made with fresh ingredients always tastes better when you’re sailing offshore!
Garnish with: olive oil, toasted pine nuts, minced scallions, hot pepper flakes….
Dip in crackers, pita bread, cucumber slices, whatever you have on board!
Basic Hummus
Ingredients
- 1 can Chickpeas, 15 oz can
- ½ cup Tahini paste
- ¼ cup Extra Virgin Olive Oil
- 1/3 cup Lemon juice, fresh squeezed
- 1-2 Garlic cloves, pressed
- ½ tsp Cumin, ground
- ¼ tsp Cayenne pepper, (optional)
- ½ tsp Salt, more or less to taste
Instructions
- Blend all ingredients to a smooth consistency. Add a little water or extra EVOO if it is too thick.
- Garnish with: olive oil, toasted pine nuts, minced scallions, hot pepper flakes....
- Dip in crackers, pita bread, cucumber slices, whatever you have on board!
