The Ultimate Smash Burger
The Burger Patty
1 lb Ground Sirloin
Steak Seasoning
1/4 cup Butter
Worcestershire Sauce
The Sandwich
Kaiser rolls or large burger buns
Cheddar Cheese slices
Tomato
Lettuce
Red onion
Pickles
Ketchup
Fisher’s Crab House Mustard
The Galley Pirates Smash Burgers differ from most other recipes in the type of ground beef used. Many recipes call for a higher fat content to get the nice charring that comes from the fat. Our Smash Burger recipe calls for the best and leanest of ground beef…ground sirloin. But we know how important fat is to the flavor, so we substitute the beef fat with….butter. Fast seared then smashed in melted butter and Worcestershire Sauce (a throwback from the 70s!) and you can’t beat that wonderful juicy flavor! And perfect for a party onboard, no grill needed.

Ultimate Smash Burgers are best served on oven-roasted buns, so heat up how ever many buns you need in your oven. Many people like to double up their burgers so you may only be heating up a couple buns for this recipe. Heat until just crispy on the outside and still soft on the inside.
One pound of ground beef will make 4 burgers. Divide your ground beef (preferably sirloin) into quarters. Roll each of the 4 quarters into balls. Sprinkle these with your favorite steak seasoning and set aside.

Heat up a flat cast iron pan. My cast iron pan was too small so I had to use my Italian fry pan which still does the trick. Throw in a couple pats of butter and watch it sizzle. You may need to open a porthole because this is going to smoke a bit.

Fry on medium high heat for about 3-5 minutes until it browns. Then flip and continue to fry for 2 more minutes.

Then SMASH. I’m using the flat side of a meat tenderizer so I have to smash all around the edges. The bigger the “smash device” the better.

Drizzle a small amount of Worcestershire sauce on each patty and top with butter. Let that melt a bit then flip the burgers. They should have a little pink to them at this point. Add cheese slices for those who want that.

Now start the layering. Our typical smash burger includes lettuce, tomato, red onion, pickles, ketchup and mustard. Be sure to use Fisher’s Famous Crabhouse Mustard for that ultimate Chesapeake flavor with a playoffs KICK to it! Hand out lots of napkins and serve!

- 4 Kaiser Rolls or large hamburger buns
- 4-8 Cheddar or American Cheese slices
- Thinly sliced large tomato
- Thinly sliced red onion
- 4+ Lettuce leaves
- Dill Pickles
- Ketchup
- Mustard (Fisher's is the preference in the Chesapeake Bay)
Instructions
- Heat up how ever many buns you need in your oven. Many people like to double up their burgers so you may only be heating up a couple buns for this recipe. Heat until just crispy on the outside and still soft on the inside.
- Divide your ground beef (preferably sirloin) into quarters. Roll each of the 4 quarters into balls, and flatten ever so slightly so they make big, fat ovals, more like the shape of a round mango. Sprinkle these with your favorite steak seasoning and set aside.
- Heat up a flat cast iron pan. Throw in a couple pats of butter and watch it sizzle.
- Fry on medium high heat for about 3-5 minutes until it browns. Then flip and continue to fry for 2 more minutes. Then SMASH. The bigger the "smash device" the better. A very large spatula works as well as the flat side of a meat tenderizer.
- Drizzle a small amount of Worcestershire sauce on each patty at top with butter. Let that melt a bit then flip the burgers. They should have a little pink to them at the point. Add cheese slices for those who want that.
- Now start the layering. Our typical smash burger includes lettuce, tomato, red onion, pickles, ketchup and Fisher's Mustard. Serve!
