Are you the person who likes to bring vegetables to the Super Bowl party, only to see no one has touched the crudité platter by half time? We all know we should eat healthy vegetables but football games are a hard sell. So go ahead and bring a vegetable, but masquerade it in maple syrup-soaked bacon with a cayenne kick and you may just see your platter disappear.

Bacon Wrapped Brussel Sprouts
12 Brussel sprouts
12 strips of bacon (not thick)
2/3 cup maple syrup
1/4 cup brown sugar
2-3 teaspoons cayenne pepper, or ground hot pepper of our choice
24 toothpicks

Mix the maple syrup, brown sugar and cayenne in a small bowl. Choose whatever “flavor” of hot pepper you want….Chipotle pepper for that “south of the border” flavor, Berbere to give an Ethiopian flare or Aleppo for a hint of the Middle East. The sky’s the limit when it comes to hot pepper! Today I went with Berber because I absolutely love the way it makes the boat cabin smell.
Preheat your oven to 400º or as hot as you can get it. Trim the Brussel sprouts by cutting off the stem and outer leaves. Cut each brussel sprout in half.

Brush the bacon strips on one side with the maple syrup mixture. Cut the bacon strip in half.

Roll bacon around each Brussel sprout half with maple syrup on the inside. Secure with a toothpick. Brush the outside of the bacon with the remaining maple syrup mixture and place all on a non-stick foil lined pan.

Pop into your preheated oven for 20 minutes. Rotate and bake for another 15 minutes or until the bacon gets crispy.

While they cook, prepare your dipping sauce.
Dipping Sauce
1/2 cup sour cream
1 tablespoon Dijoon mustard
2 teaspoons honey
Mix it all together.

Once crisped up, remove the bacon wrapped Brussel sprouts to a platter and let cool a bit before serving.
