Greek Salad

A fresh Greek Salad is found alongside every Greek meal. And it can be a meal in itself with the addition of some gyro meat or grilled chicken. Be sure to add Kalamata olives. I thought I had a jar of olives on board Night Town this evening, but alas… a Greek Salad with no olives. Perilupos. : (

Traditional Greek Salad

Fresh green lettuce
1 cucumber, sliced and quartered
3 small tomatoes, cut into wedges
1/4 red onion, sliced
about 10 chunks of Feta cheese
Kalamata olives

Greek Salad Dressing

1 clove of garlic, pressed
1/2 cup olive oil
2 tablespoon fresh lemon Juice
5 tablespoon white balsamic vinegar
2 teaspoons Dijon mustard
1/2 teaspoon sea salt
2 pinches of oregano leaves
a grind or two of fresh ground pepper

Greek Salad on plate w pastitsio

Whisk ingredients together and drizzle over you salad. Serve along side any great Greek meal. This salad was a nice light compliment to the very filling Pastitsio we had on board this evening. Oompa!
