Caprese Bites

Every now and then we do the easiest of appetizers…like popcorn and bruschetta…that are so old school and obvious we often forget to make them. Sometimes we post these recipe as merely a reminder to make them. This does not even really need a recipe at all, Caprese Salad on a toothpick: 3 ingredients, 10 minutes of time. And a great amount of vitamins and nutrients but still low carb.

Caprese on a Stick

1.5 cups grape tomatoes, halved
1.5 cups miniature mozzarella balls (or 1/4 lb mozzarella cut into 1/2″ chunks
~36 fresh basil leaves
Balsamic glaze or 1 tablespoon white balsamic vinegar and a teaspoon of sea salt
12-20 toothpicks

Halve the grape tomatoes. Cut the mozzarella cheese balls in half or if larger chucks, cut into 1/2″ pieces.

Skewer onto toothpicks. This is the rotation that will usually fit one toothpick: 1/2 tomato, basil leaf folded over, 1/2 mozzarella. Repeat on same toothpick

Place them on a platter, grate sea salt over and drizzle Balsamic Glaze over them. If no Balsamic glaze, drizzle white balsamic vinegar, sprinkle sea salt, and little sugar and salt. It will all be so tasty!
