The “tartufi” in this recipe is the touch of truffle in the dressing. I’ve become a huge fan of truffle salt, as you can see in Lobster Mac ‘n Cheese and Turkey Tetrazzini. Fresh, quick and easy. Goes with most any Italian meal…for this night, Clams Linguini.
2 pressed cloves garlic
2 tablespoons lemon juice
2 tablespoons white balsamic vinegar
1 tablespoon dijon mustard
1/4 cup olive oil
1/4 cup mayonnaise
3 teaspoons Truffle salt
(or 1/2 teaspoon truffle oil and 2 teaspoons salt)
Whisk all ingredients together.
Drizzle dressing onto chopped romaine lettuce and toss. Grate parmesan cheese on top and add croutons. Serve with almost any meal. Or make it a meal in itself by adding grilled fish, chicken or sirloin. Or the Chesapeake way….topped with mini crab cakes.
