Filled with protein yet still vegetarian, this is my go-to salad for lunch. No long description necessary. We’ll just jump to the recipe!

The Perfect Lunch Salad
Spinach, walnuts, blue cheese with soft boiled egg.
Ingredients
- Baby spinach and arugula leaves
- Crumbled blue cheese in large chunks
- Walnut pieces
- Slivered red onion
- Croutons
- 4 minute egg, sliced in half
- Sprinkle of Togarashi
Salad Dressing
- 2 tbsp EVOO
- 1 tbsp White balsamic vinegar
- 1 tbsp Mayonnaise
- 2+ tsp Dijon mustard
- 1 Clove of garlic, small, pressed
