Arugula Salad with Shrimp

Galley Pirates offers up some great Post Thanksgiving recipe ideas; creative ways of turning your leftover turkey into some smashing new meals. Starting off with breakfast, try the Turkey, Sage and Leek Quiche, a big hit with the savory breakfast crowd. Then follow up with The Post Thanksgiving Day Sandwich or Turkey Wild Rice Soup. For dinner, the go-to is Turkey Tetrazzini—baked spaghetti with mushrooms, vegetables and sliced almonds. Last, but not least, there is pizza…the Manchego Turkey Pizza, with manchego cheese, truffle oil, artichoke hearts and capers. You can’t go wrong with any of these leftover turkey ideas.

But let’s just imagine for a moment that you really don’t want to eat turkey or any left overs at all today. Nada, no way, no matter how elaborately the leftovers are disguised. Maybe you just want something light and easy, having nothing to do with fowl or root vegetables. This simple, sweet, light salad may be all you want for lunch today.

Fresh ingredients is the key here, and this recipe is a little on the sweet side; really accentuating the tartness of the arugula.

 

Arugula Salad with Shrimp

4-5 cups Fresh arugula
1 + cup grape tomatoes, sliced in half
1/2 cup thinly sliced red onion
1 tbsp toasted pine nuts
1/2 lb steamed shrimp

Dressing

2 tbsp Olive Oli
2 tbsp Honey
1 tbsp Dijon mustard
Juice of one lemon

 

If you can get your hands on local honey, do it. I’m getting Poplar Hill Honey from Annapolis, sold at a number of local venues, my favorite being Annabeth’s. There’s a good grounding of thought that taking 1 tablespoon of local of honey a day can help with allergies. I don’t know if there is science behind this but I’ve heard many people say it works. It can’t hurt to try!

Steam the shrimp any way you want. We have two “competing” pickled shrimp options to choose from as well, or pick your own!

Combine all ingredients together and serve.
